Vinegar is not the main ingredient in mayonnaise. It’s not even a required ingredient in mayonnaise.

Mayo is made up entirely of ingredients you can store on your counter: eggs, acid, oil, salt, and mustard. Mayo was created in 1756, household refrigerators weren't available until 1913.

Don't buy the refrigeration propaganda!!!

Food for thought:

Homemade mayo from eggs, oil, and white vinegar lasts about 4 days before it starts to turn.

Grocery store mayo lasts for months.

The eggs they use for mayo are both pasteurized and have 10% salt. Pretty much nothing pathogenic is gonna grow in it.

It’s 100% because folks stick their dirty spoons in it, then wanna bitch that it started to grow mold.

It’s actually true in the case of ketchup.

It’s just super acidic which prevents microbial growth.

It contains eggs. My college roommate left a jar of mayo out for several weeks. It turned orange and stunk. I wound up throwing it away. She had a small refrigerator which was not safe to open unless you had on a gas mask. Her side of the room was knee deep in dirty clothes. Instead of doing laundry she bought more clothes. I used to spray Lysol around the room but her side still stunk. I even offered to clean her side of the room but she didn't want anyone else touching her stuff.

I leave mine on the counter. Takes me about three months to use a quart. Use clean utensils. At the camp I won’t leave it out because of fluctuating temperatures.

I love my potato salad warm with non refrigerated mayonnaise.

wrong. bacteria is already present. when you open it you expose it to oxygen. guess what bacteria, like all life forms, need to grow.

as said, cooler temps inhibit that growth.
