Are you familiar with canning (like what your grandma or great-grandma used to do with mason jars)? Same thing. If the seal is intact, any airborne bacteria cannot get in. The moment the seal is broken, you need to refrigerate it.

I put mayo, blue cheese dressing and french onion dip in the fridge the moment I unpack it. It all tastes better cold.

Jesus, how old are you? Even high school me understood that bacteria does not grow well in sealed containers, but does once that seal is broken.
Your grocery store has tons of sealed containers that require refrigeration, like every canned good.
