You can open it and just put it back in the pantry if you want to. This is a free country, after all.

Mayo does not go bad and it does not need to be refrigerated.
Vinegar is main ingredient.
Vinegar is a preservative.

Are you familiar with canning (like what your grandma or great-grandma used to do with mason jars)? Same thing. If the seal is intact, any airborne bacteria cannot get in. The moment the seal is broken, you need to refrigerate it.

Just in case you really wanted to know why.

The thought of a spoonful of warm mayonnaise makes me nauseous.

Watching my wife dip hot fries into warm mayo in Belgium made me gag. It doesn't bother me with Andalouse (kind like 1000 Island) but I swear I could smell the hot mayo from 3 feet away.

I put mayo, blue cheese dressing and french onion dip in the fridge the moment I unpack it. It all tastes better cold.

if an unopened plastic jar of mayonnaise can sit on the shelf of a store for weeks, and in your pantry for several days, then why does it need to be put in the fridge as soon as you open it?

why can't it just stay on the shelf or cabinet?

OHHH what exactly are you applying it to? Bread or.....

Jesus, how old are you? Even high school me understood that bacteria does not grow well in sealed containers, but does once that seal is broken.

Your grocery store has tons of sealed containers that require refrigeration, like every canned good.

I haven't refrigerated mayo in years.
and I don't have any issues now that I didn't have before I quit refrigerating it.

The Fairlife milk I just opened is good until the middle of August.

If it was unopened.

You are using way too much mayo if there are less than 10 people in your household
