Why do some Cajun people put roux in their spaghetti?

Spaghetti is supposed to be an Italian-based dish, not Cajun. A lot of South Louisiana people screw it up and put flour roux in it. It totally ruins it.

I just ate some at my fiancé’s mom’s house. It definitely was low quality spaghetti.

Do you guys know anyone who does that crap?

You are talking about the sauce I presume. A roux is used a thickening agent for many things including a tomato sauce.

I’ve had bad spaghetti in South LA before, but I didn’t know people put a roux in it.

First you make a roux…..

If you don’t have 6-8 hours to slow simmer and thicken a tomato sauce like an Italian just add roux like a Cajun. I don’t see the problem. If you cook the roux properly and proportion it correctly it shouldn’t have a floury taste.

Why do incredibly ugly Cajun men that resemble a warn leather boot produce daughters that could be models…. There are a lot of things we don’t know about the Cajuns.

I've never really heard of putting roux in Italian based spaghetti, but I've definitely heard of putting tomato sauce or canned tomatoes in a roux to make a quick catfish coutbouillon type dish especially if you like it in more of a peasant soup style. Love that shite, quick and easy.

Never heard of it.

Btw, pizza is supposed to be Italian too but some chains and local restaurants frick it all up by putting philly cheese, bbq sauce, pineapples, etc....why can't people just leave shite alone? Always have to frick with something

Always used tomato paste to thicken a tomato-based pasta sauce, I'd think a roux would be better for a white sauce or something. Not sure though, I don't think I've ever actually made pasta with white sauce.
