that is my feelings as well.
I love a good traditional spaghetti, but you aren't going to find that in the south, and that's just not how we typically cook.
a good cajun spaghetti really is just a sauce piquant. it's just a spicy spaghetti instead of a sweet one. They can both be great.

I don't. I cook noodles at the end. Before i dump the starchy water in the sink i mix a cup in in with the meat sauce.
