Why do so many restaurants make terrible salad?

I like a salad with bacon bits, tomatoes, onion, boiled egg, croutons. So many nice places give you some mixed green shite with only small tomatoes and I can’t stand it.

expensive to keep quality fresh produce that spoils quickly. even though the individual ingredients are cheap there’s a lot of waste with salads

I hate it when they pile a bunch of fricking cheese on one. A little is fine.

I think at most restaurants the wait staff throw the salads together, not the cook staff...not sure but that's what I was told by someone who worked in a private owned (not chain) restaurant.

Texas Roadhouse has a legit side salad. With made from scratch dressings. The way God intended.

Can’t speak for others but yes we servers did the salads everywhere I worked. We did make homemade dressings though.

All three restaurants I worked at in college had a pantry chef that did all the cold apps including salads. That is actually where I started in the back of house. The last place I worked was really "fancy" and the pantry chef went by the traditional aka French garde manger.

We have to have 1-2 people dedicated to salad making on a given shift. But we make big salads with homemade dressings, so we are unique in many ways.

Most of the time you are lucky if you get cheese. Mostly lettuce, some carrots, and dressing seems to be the norm lately.
