Why do recipe writers lie about how long it takes to caramelize onions?

Because most recipes are bullshite and are hardly ever actually dead on with ingredients and techniques.

The real lies are on instructions for frozen vegetables. They want to make it look like dinner will be ready in minutes, but the veg would still be hard as rocks after the cook times listed on the packages.

The people who write those directions should be forced to eat only food cooked that way.

What about frozen nuggets or fries and stuff like this? Always an additional 15 min plus until they are ready for consumption.

Takes me longer than 45 minutes low and slow for good caramelization. I’ve been using the oven method which takes several hours. The result is delicious.

/\ This. I make traditional French Onion Soup and it takes me at least an hour plus to caramelize the onions I use to make it. And only then do I start to ladle the beef stock slowly into the pot.

If I'm browning onions I set aside at least 30 minutes. At least 15 minutes to soften or clarify.

You can have burned onions in 5 minutes but not sweet caramelized onions.

Yeah if anything, they're done too fast in my experience. I keep an eye on stuff like that.

Yeah, oven not broken have an additional thermometer inside.

How about grits? Never ever have I cooked grits like the packaged instructions said. Even instant grits for that matter. Maybe for Yankees but, grits need longer time then what is in print on package.

you baws needa look up Paul Phrudomme's onions and or roux he will amaze ya. That said though I enjoy the process of cooking so dont mind taking my time gives me time to enjoy a few cool ones while I stir. One thing that helps speed ya onions up is to season them the salt draws the moisture out making them cook faster. Also frozen onions will break down and brown much faster freezing burst cells and greatly speeds the browning process too.

Baking soda is even faster than salt.
