I like a brown roux and no tomatoes or sausage. Any suggestions?

Dempseys
I really like Duke’s as well but it’s in Denham/Watson

City cafe does a good dark roux. Dont remember about the sausage though. There might be sausage.

Mike Anderson's in Gonzales. I can't speak for the location in Baton Rouge as I have not been in many years.
They could be the same, or they could be different because each location is independently owned I believe.
Also, just outside of Baton Rouge, Duke's in Denham Springs and Watson has a very good seafood gumbo as well.

Back in the day Uncle O’s had a good one. No clue if they are still open.

Phil's Oyster Bar has a pretty good seafood gumbo. I don't care for much else they make, but the gumbo is good.

Sammy's fits the desired gumbo description and is good.

Wife had to stop ordering that because it consistently had no discernable amount of seafood beyond part of a crab leg. I like their duck and sausage gumbo though.

no tomatoes
This narrative is played the frick out, especially for a seafood gumbo.

Its good, at least 10 or so years ago it was. I bet they have a little tomato in it.

I always add 2 cans of tomato sauce and I can rotel in my gumbo. No one has ever asked if I add tomatoes. I cook it for 4 hours along with the roux before any chicken or sausage is added
