A little wine for da marinade... a little for da cook. A little wine for da sauce, a little for da cook. A little wine wiff da meal, a little fer da cook. Whooo eeee y'all, dat some fine eatin.
My late Aunt knew him well. They judged some writing and speech contests together in the 70's. She ended up being kinda mean and bitter as the Alzheimer's ate her up but she never said a negative about Justin Wilson.

I remember his eyeballing measurements and being spot on. Like a lot of the episodes he'd pour a teaspoon of salt into his palm then look at the camera and and ask, "what? You don't believe me?" The camera would zoom in and show him pour it from his palm to a measuring spoon, spot on every time.

For business, my dad used to travel all over the state. When he was in Cajun country, he would come home with Justin Wilson's comedy albums. We had at least 4 of them. So I was well acquainted with him way before I ever heard of him as a cook.
When the Rivergate convention center opened in New Orleans in 1968 (where Harrah's casino is now), the first event was a trade exposition that my family attended. As we walked by one of the side conference rooms, we saw him telling jokes. That was one great experience even though we knew many of the jokes already. He did not have his cooking show until much later.
Edit: Rivergate, not Riverwalk.

Yep we had them too. My dad's only time to a comedy show was watching Justin Wilson's one man show at the Evangeline Club in Ville Platte. Between his albums and the Johnny Joneaux (sp?) show on the radio, we never had a bad day at the camp.
