Most LaPlace versions will have chunks or coarse ground pork. They are not too spicy, but much more smokey than smoked sausage or any of the mass-produced versions (Veron's, Martin's, etc). I think they add much more flavor to gumbo, jamb, red beans, etc than any store-bought version.

The Cochon version you mentioned has more spice and less smoke than any of the LaPlace versions I think.

I only use Veron's when I'm out of Jacobs because I can buy it without driving to Laplace. It's missing a spice that is found in Jacob's and Bailey's, and it's not as seasoned or smokey.

I love Andouille, its one of my favorite seasonings. I use small quantities in my dishes as flavoring, not the primary meat because of the pepper in it.

Oh, and try the tasso at jacob's. It's very good.

Got some. And some pork andouille, chicken andouille, boudin, smoked sausage, hot sausage, and fresh pork sausage. Jacob got more of my money than Rick did. Which is saying something.

I prefer Bailey's. Jacob's is very good too, but as another poster said, it's more like ham. Never had Wayne Jacob's.

I've never really had a problem with finding a flavor I like. My gumbo is darn good, to me and all of my followers.

Jacob's is nice and smokey (REALLY SMOKEY) but I like the Spiceyness of Best Stop in Scott more. I wish I could combine the 2.

Jacob's, it's worth the trip. I won a red beans & rice contest once, the only meat I used was Jacob's andouille, it blew away the competition.

I vote Jacobs, that is good stuff. The wife is from LaPlace. Last time I was there loaded 60 lbs in a suitcase and checked it back to ATL. I like spicy food, but their hot sausage is Hawt!! It is not Naga Viper hot, but you feel it when you eat it.

Yep. Balls did the right thing. If you happen to be passing through the lovely town of Laplace, load up an ice chest.

I love it when there are threads I wanted to start. I was in LaPlace the other day and wondered this. I have only been to Bailey's, I haven't tried Jacob's yet.

Need to give it a shot.

I took an ice chest of crabs, shrimp, and andouille back to South Carolina in the upstate region of hell. The French crowd of Clemson was a very happy bunch of people the nest day.

A vote for Jacobs here, but I've only tried Baileys. Thought Jacobs was much better. I can't get enough of that pecan smoke flavor. Anyone try the jerky there? Best ever, by far. (Not sure it would meet a strict jerky definition for long shelf life, but man is it good!)
