re: When people say they put potato salad in their gumbo what do they mean?

Fix your bowl of gumbo with rice, put a spoonful of potato salad in the bowl.
As far as what kind, go with an "eggy mustardy" potato salad, no crunchy stuff-potatoes, eggs, mustard, mayo, & seasoning.

Not really, but I prefer the potato salad on the side because I really love rice in gumbo. We'll put the rice and the potato salad on the side if we're serving both and let people do what they wish. I like to dip some potato salad into the gumbo, but putting the scoop in affects the flavor of the gumbo quite a bit if it breaks up. I don't like the flavor to be muted on every bite, but I do enjoy the combo flavors and I like crunchy potato salad with celery.

We also sometimes serve a sweet potato on the side because some folks like sweet potatoes in their gumbo.

No. We simply like to enjoy the flavors of the different items on our plates rather than mixing everything up together. We have superior palates.

mess with the mayo/mustard/pickles/egg proportions all you want, just don't make it sweet. Use a good tangy mayo like Duke's.

I'll take mine in place of rice.

Most of this. I can go back, but I really enjoy the potato salad in my gumbo. I'm a no rice guy when I do it. Really, really thought it was nuts til I tried it.

I've seen and had both versions. The potato salad in gumbo was good, but I wouldn't have it again. The gumbo ended up being cloudy with mayo, and I didn't like the look of it as I ate it.

Also, chicken and sausage gumbo is better for potato salad imo. If it's chocked full of crab/shrimp then there is no way I'm adding anything to the gumbo but rice.

I'll take a scoop of potato salad and then a scoop of gumbo on the same spoon from time to time. It's amazing.

Stupidest thing ever. It taste ok I guess, but you might as well put potatoes, mayo and mustard in your gumbo and call it something else.

If potato salad isn't available, I just don't order or buy gumbo. I'll eat it, but it goes from favorite food to meh without potato salad.

They are called communists, and they are eating gumbo the wrong way. Sure someone might say "i can eat my gumbo the way i want". No, no you can't you anti-American, freedom hating bastard.

If you are going to plop a glob of potato salad in your gumbo, then why even bother with the gumbo? Just make chicken noodle soup and throw your PS in that. Gumbo is a balance of multiple ingredients to get a fantastic end result. No better way to ruin that than jamming a glob of potato salad right in the middle. If you are going to ruin a gumbo like that, why not just make the gumbo with potatos, mustard, pickles, and eggs added to it? Your already bastardizing the gumbo and removing 95% of the taste of the gumbo by adding it after, why not just start that from the beginning.

The people i know that do that are mostly East Texans (Lake Charles). I tried it once, never again.

And furthermore, if your gumbo requires a scoop of potato salad to make it taste good, then you are making gumbo the wrong way.

Though the best thing to do is use jambalaya instead of rice.

I cant think of anytime southern Louisiana uses potatoes in cooking, can you?

No way they make Potato salad. No way.

This is what I mean. But I typically don't do it with gumbo. Shrimp or crab stew? Yes.

Keep in ind that this potato salad is not some abomination with mustard and/or relish.

Spicy creole mustard potato salad with whole stone ground mustard is amazing.

My kids will not eat gumbo without potato salad. They put a scoop in the gumbo and stir it all up until the potato salad dissolves. It looks terrible, but is actually quite tasty.
