Spaghetti squash with some roasted garlic, pinenuts, basil, chicken & some olive oil. Will add spinach or tomatoes on occasion

Oh, spaghetti squash is a good one. I find it way more filling and a much better texture than "zoodles".

Indian spiced red or yellow lentils (dahl) served with Greek yogurt.

Recently made the Cooks Illustrated "meatless meat sauce" recipe that uses pulsed cremini mushrooms, onions, crushed tomatoes, etc. Served with zuke spirals instead of pasta. It was really good.

Chicken or Shrimp with a coconut-lime sauce. Sauce usually consists of garlic, bell peppers, chicken stock, red pepper flakes, coconut cream and lime, all cooked down and then served with a side of broccoli. Definitely one of our family's favorites.

Mexican food is also easy to do, without the tortillas. Greek Yogurt is a great sour cream substitute and you can throw homemade green sauce on almost everything.

Homemade spaghetti and meatballs (lean or turkey) served over spaghetti squash.

Orange chicken, made with fresh squeezed fruit and coconut aminos. Serve over cauliflower rice.

If you are just trying to eat healthy but not lose weight, then there is nothing wrong with throwing in more carbs like potatoes, brown rice pastas, etc.

Totally depends on how active you are imo. I sit in a cubicle all day and often times I'll go straight home after work, pour a glass of wine and then have dinner. I don't think I need a much carbs

Poached Halibut and Steamed Asparagus

Olive Oil Poached Halibut

Ingredients

¼ cup capers, rinsed
2 ½ lb (1-inch-thick) halibut fillets
1 ½ large lemons, thinly sliced crosswise
¼ cup fresh flat-leaf parsley
2 cups extra-virgin olive oil
Fresh lemon juice

Directions

1. Preheat oven to 250°F.

2. Chop half of capers and pat fish dry.

3. Sprinkle fish with 1 ½ teaspoons salt and ½ teaspoon pepper.

4. Let stand 10 minutes at room temperature.

5. Arrange half of lemon slices in 1 layer in an 8-inch square glass baking dish and arrange fish in 1 layer over lemon.

6. Top with all of capers, remaining lemon slices, and 3 tablespoons parsley, then pour oil over fish.

7. Bake in middle of oven, uncovered, until fish just flakes and is cooked through, about 1 to 1 ¼ hours.

Serve fish with some of lemon slices, capers, and oil spooned over. Sprinkle with remaining tablespoon parsley.

Stop the Clock Oatmeal

2 cups Steel cut oats
1/2 cup oat bran
1/4 cup nonfat dry milk powder
1/4 cup low fat soy flour
1/4 cup almond meal
1/4 cup hazelnut flour
1/4 cup ground flax seed
1/8 cup sesame seeds

Combine ingredients in a large mixing bowl.
Mix 4 cups Non-Fat milk and 5 cups water in a large pot and bring to a boil.
Gently pour in oatmeal ingredients from mixing bowl and stir continuously until oatmeal begins to boil and thicken.
When oatmeal begins to thicken, add a tablespoon of cinnamon if desired, reduce fire to low and cover pot. Let cook for 30 minutes stirring occasionally (often) to keep bottom from sticking.
Serve hot and top with fresh banana, blueberries, apples, strawberries or your favorite fruit of choice.

Oatmeal can be frozen in smaller individual containers or will keep in the refrigerator for a week.
