What’s your favorite healthy meal?

I have been trying to eat healthier and was looking for some ideas. What’s your favorite meal to cook and what’s your favorite to go out and eat?
For me at home it’s salmon and salad with another type of vegetable. Going out I would have to say poke with mixed greens and little bit of brown rice.

My go to for lunch right now is grilled chicken breast, mixed green, and some mixed quinoa.

Both of those sound appealing to me. When I try to be healthy it usually involves fish and vegetables. Sushi counts as healthy to me

Grilled chicken breast in olive oil, then brown bell peppers, onions and other veggies, add a heaping tablespoon of garlic, then add in fajita seasoning, cook down with some water, serve with beans and avacados, eat that like fajitas, but without the cheeses/sour cream or tortillas

Chicken breast with some type of veggie. Grilled breasts with pan roasted brussels is my most frequent. Asparagus or broccoli also used a lot. We eat that 2 or 3 nights a week. Boring, but realtively healthy.

I resisted the "cauliflower as a substitute for everything" trend for a good, long time...but I'm a recent convert. Microwave a bag of frozen riced cauliflower until tender and then make faux-risotto: saute onion in a skillet until fragrant, add riced cauliflower, a couple oz blue cheese, and a splash of heavy cream, plus a generous grinding of pepper. Stir until cheese melts.

Pretty damn tasty. Sliced mushrooms, sauteed w/the onions, are a nice addition.

Quinoa can be tasty but it is in no way healthy.
