If we're talking tex-mex, its simply the quality and freshness of the chips and salsa. This will show how much the staff gives a damn.

stale chips or kethupy salsa.

Pork tacos. Most bad Mexican places only have chicken or beef and serve crappy cheese on every taco. If they offer pork with onion, cilantro and salsa verde then they may be legit. I only say this because that dish is literally all they eat on lunch break.

Enchiladas IMO. Chips and salsa is important but I can overlook if the enchiladas are good.

Juan's chips and salsa blow, which is why I am reluctant to eat there even though I enjoy their other food.

Yep. The entrees at the SG in Shreveport are still consistently good, but the New Orleans SG is complete shite.

But you right .. Superior's chips & salsa are fricking on point. The queso at most though isn't like the queso in Shreve, which is white cheese, baked to where the top is slightly crispy and has chunks of white onion in it. It's the bomb. Not some yellow velvettay bullshite.

I've only been to the one in Birmingham. I don't recall the chips and salsa being particularly good or bad, but their brisket quesadillas were the bomb. The brisket was pulled and had great flavor.

I like the salsa at Cocina Superior. I like a salsa that's blended a pretty good bit. I'm not a fan of big chunks. Their salsa has a good flavor and nice kick.
