No SO, heading to Big Bend on Sunday for hiking. Will dine on whatever is served at Chisos Mountain Lodge.

Ill probably grill something. Hopefully I can try out my new ceramic oyster shells. I'll make a nice salad to go with. And probably grill some sweet potatoes too.

Have you been to Starlight Theater in Terlingua ghost town?

I enjoyed that place. They have live music later in the evening as well.

Took a trip to west Texas a few years back and went through Big Bend. I'm jealous.

Fish en papillote looks fancy even though it is easy as hell to make. I don't know what kind of fish selection Rouses has, but you can use this method on most fish.

I like to make Mr. B's BBQ shrimp for date nights sometimes. It is also ridiculously easy (just don't overcook the shrimp) and takes about 5 minutes.

I was leaning towards bbq shrimp.

I won't be the one doing the cooking. I also have limited gear at my apt to cook with.

And third thing my windows in my apt don't open so searing a steak my not be the best option due to the smoke created.

Thanks for all the suggestions

I cook for my woman every damn night.

Same here. She always has 3 choices. What I cooked today, leftovers from yesterday and leftovers from the day before. On the 4th day the dogs get anything still in the fridge.

On Valentine's day she will have the choice of:

Pasta/spinach salad
Shrimp and corn chowder
Crawfish etoufee.

Solid... I'm thinking of buying whatever fish looks the best at the Rouse's in the CBD this afternoon.

Any suggestions on something easy to do with the fish? Sides?

Also I don't cook so I'm leaving that up to her. I'm just going to buy a bundle of stuff and tell her have fun.

Like I said, if you're doing fish, en papillote is very easy and feels fancy/special.

I do this one with different white fishes a good bit. All you need is some parchment paper/parchment envelopes. You don't need to follow a recipe. Just throw some shite in there with the fish. White wine, butter, capers, lemon, tomatoes, onion/shallot, garlic, etc. .. whatever you want.
