I usually cut up some Bourgeois fresh garlic sausage into about 2” pieces.
When it boils (cooks) the casing gets tight and makes it look like a little meat ball.
For smoked sausage Manda, sometimes a pack of third graders (lil smokies).

I like smoked sausage in the boil. The brands I use are Richard's and Conecuh.

He's also saying he doesn't eat boiled crawfish if they haven't been boiled via crawfish boil. And to be fair.

smoked sausage, not the cheapest, but certainly not Laplace andouille that runs close to $7 a lb. now.
Just don't do like my brother-in-law did once. He threw in those cheap arse hot dogs that sell for less than $2 for an 8 pack.
