What to do with this big arse block of cheese?

When my mom visits she always insists on dropping off some random food item (God bless her for that) and this time its a huge block of cheese. I dont wanna chunk it but I dont usually eat much cheese . Ive never done cheese on the smoker before.. would this be a good kind to smoke. WwFBD?

Cut it into smaller pieces and freeze for future use.

Rat does all cheese freeze well?
Does it change the texture?
I have a vacuum sealer and could easily do this but never have.

Most of your harder cheddar/colby-jack types freeze just fine. Back at the beginning of quarantine or whatever we're calling it now, the wife had placed a Walmart grocery pickup order. She added a 1 lb block of Colby-Jack to her cart. They were out, so they subbed a 4 lb block instead, at the 1 lb price. This was a massive log of cheese. I immediately cut it in quarters, and froze three 1 lb sections in individual bags. I think it lasted us about 2 months. Just grabbed one out of my chest freezer when the block was getting low, and let it thaw out in the fridge. I use it mainly to cook with, either slicing it for grilled cheese or burgers, or shredding it to add to eggs/grits/casseroles. Never really noticed a change in texture, but I wasn't just slicing it to put on crackers or eating it plain.

You're gonna need a big ol summer sausage and several boxes of Ritz for dat dere cheese.

If you're gonna cut it up and freeze, suggest you slice it so the rind stays with what you plan to freeze as much as possible.

I have never had any ill effects from any cheese I've frozen. Never tried something like brie or something.

I smoke a lot of cheese. Several different types. Do a cold smoke (no heat) maximum time 4 hrs. and that's pushing it. After the smoke and let cheese sit at room temp. for 24hrs. Then wrap in plastic wrap for at least two weeks before using. I vacuum seal and store in fridge for later use. I have some over a year old...I do not freeze it. Makes great gifts.
