What size pot for a 20 person Gumbo?

I've volunteered to make gumbo for twenty family members after Thanksgiving at a family members home in Arkansas. I am not sure how big of a pot they might have and the pot I usually make mine in is not large enough for that volume. Does anyone have an idea of what I should look at purchasing?

I've looked at the IMUSA oval roasters on Amazon. 15 or 18 inch?

Any suggestions would be welcomed. I plan on bringing all the ingredients (already smoked some turkeys and made some stock) and cooking it up there.

Cook it here, freeze it then take it there. Will be even better re-heated.

Bring some extra stock along if so. I find it can thicken up a little too much after freezing.

Considered that but not sure what I would freeze it in? Then I still have the issue of having a big enough pot to reheat it all in.

32 ounces in a quart

An entree serving can be considered 16 ounces (2 cups)

16 ounces X 20 people = 320 ounces

320 ounces / 32 oz = 10 quarts of gumbo



You’ll need a pot larger than 10 quarts for large servings

More than likely, you will serve 12 ounce servings, so you would need 7.5 ounces of gumbo for casual servings.

8 quart pot will cook about 7 quarts.
You’ll get twenty 11-ounce servings which could work but it won’t be plenty.

6 quart pot will cook about 5 quarts.
You’ll get twenty 8-ounce servings, which is small.

I just cooked a gumbo for 70 in a 10 gallon pot. I'd think a 12 quart pot should do you good.

I would count on 2 to 2.5 gal of gumbo. Probably SAFE with a 12qt pot but use this as an excuse to get a little larger one. :)

I use my 14 qt Magnalite to cook for 15-20 pretty regular.. If you can cook it here, you can reheat it in in just about anything..

Thanks all. Ordered a 15" Oval Roaster made by IMUSA (knock off Magnalite/McWare). Reviews say it's good for around 12 quarts. Should be plenty and would rather not have much leftover.

For what it's worth, the unperfected Gumbo Calculator says a 12 quart pot at 90% fill will do it with 16 oz servings.

Go to pots and pans store. Buy the pot that states: "Holds enough gumbo for at least 20". Problem solved
