What oils for browning meat

Wondering what everybody uses to brown there meats for rice and gravy. I use vegetable oil everytime, but seed oils seem to get a bad wrap lately. I wanted to start using beef tallow. Does it change the taste of the meal any.

Any kind of animal fat is money. When I buy a bag of leg quarters, I always render the extra fat I trim off them for browning/sauteing onions

Beef gets browned in tallow
Pork gets browned in lard
Chicken gets browned in avocado oil or olive oil
veg gets sautéed in whatever I used above

Tallow is my go-to for browning meat. I buy large hunks of beef and break it down myself and any fat trimmed off the slabs gets cooked down to make tallow. On average I get a good quart of it when I break down a whole N.Y. Strip, a big brisket or get a big slab of prime sirloin to part out for steaks.
Any sinew with meat that's trimmed off goes into a pot to make some beef stock. Nothing goes to waste.
I've never done it, but many folks swear tallow is their go-to for making fries. I don't eat much fried food now and fries are cooked in an air fryer for a healthier option.

My grandma was probably 90 years old before she used anything but rendered bacon fat. Probaly wasn't the healthiest, but she lived until 98. And whatever she cooked, damned sure was delicious...

I use bacon grease to fry an egg or saute' vegetables.. and if I'm braising short ribs, I'll render bacon down and use the fat.. but nothing beats an egg fried in bacon grease.
I like using chicken fat to saute' onions and peppers when I'm cooking chicken. A little goes a long way.. I also like hog lard or tallow.
I like ghee and olive oil mixed to cook salmon.

I use grapeseed oil for browning meat and oiling grill grates. Neutral flavor and high smoke point.
Add ivermectin if the seed oil concerns you. According to reddit, it balances it out.
Avocado oil is good too. Not a seed oil, but it's expensive.

Every thing in hog lard. You can buy a gallon jug from any cracklin making store. It stays good on the counter, but I keep my in shop fridge.

Why not just use the pork lard for chicken?
Nothing wrong though with using oils though.
