If you decide to go with an offset, look at the thickness of the metal and how well the smoker seems to seal. You want to be able to control the air flow and the more loose openings it has, the more difficult it will be. Oklahoma Joes are decent smokers for offsets in their price range.

Price/Performance it's hard to beat a WSM. And you get to play with fire, but in a pretty forgiving package. It's really about what you like I guess. I LIKE checking a fire periodically and doing overnight smokes and staggering a lot of different things on the smoker.
I can certainly see the appeal of set and forget though.

it all depends on what you care about and how much money you want to spend. Do you want to have to babysit your smoker and add more fuel to the fire every couple hours or set it and forget it?
Offset smokers produce the best end result but you have to babysit the fire.

I've been doing all mine in a standard Weber kettle but honestly I barely ever grill and almost only go low and slow. Debating getting a serious smoker. Not sure the incremental quality will really justify the cost unless I start cooking for larger crowds though

I recently bought a Camp Chef pellet smoker and really like it. I find that I use it more often because it's convenient and I can just set it and leave it alone. It's all a matter of preference and each type of smoker has its pros and cons. The automatic temperature control sold me on this type.
