Totally depends on the dish.
For mashed potatoes, it's mascarpone cheese.
For baked beans, nothing boosts it up like a good ham bone.
Red wine and butter are also quite versatile and useful.

Little tomato paste for certain things, barbecue shrimp, garlic butter sauce. I keep a squeeze bottle of it in my fridge.

I have a good recipe for bbq sauce. Instead of white or cider vinegar, i use red wine vinegar and a touch of cinnamon.

We purchased what we thought was a decent grinder and some Malabar peppercorns. I don’t know if they are the fanciest or what have you, but they have incredible depth of flavor. Definitely capable of changing a dish.
