Several I watch have already been listed. One that isn't that I really enjoy is Sonny at ThatDudeCanCook. Legit chef that has over 18yrs restaurant experience. He does a funny deal at the end of each video where he assaults his fridge when he tastes the end product. Very funny ending to a serious cooking show.
Him and Stephen Cusato at Not Another Cooking Show are both seriously talented but teach on a simpler level that anyone can follow.

In his latest video he recreates Gordon Ramsey's steak sandwich that looks delicious. Gordon has actually responded to some of his videos in the past. Funny stuff.

Used to be Babish but he’s stretched himself too thin and honestly doesn’t do anything interesting anymore. His “Babish Universe” was cringe but not as cringy as when he painted his nails for a few episodes to be gender-fluid or whatever. Made a big fuss about it when his viewers said it looked dumb and lo and behold, he no longer paints his nails.
Joshua Weisman is over the top but he’s legit as far as legit goes.
Adam Ragusea is also great and has a real calming presence about his videos.
Nick DiGiovanni is entertaining but may have peaked. Not every recipe needs Osmo salt.
Food Wishes is always great.
Sam the Cooking Guy acts like a try-hard but the man can cook.
Ethan Chlebowski does good work.
Kwook does some cool shorts. Christmas around the world was pretty great.
Samseats may be my favorite. His videos are so satisfying.

Not so much past his prime but he just had a very low ceiling when compared to other YouTube chefs and personalities.
Can only show so many videos on how to cook jambalaya. Also compared to other productions his editing and videos are very amateur. That’s not a knock on him because that’s what he wants to do. And I’d say he did very well for himself.

I used to like his stuff when he acted semi-normal. Now he acts like a cat in a trash can high on LSD.

I love Jean Pierre.
Italia Squisita is a nice one I recently discovered.
The Meateater Duck Camp Dinners series was great.
I also follow French Cooking Academy.

Malcolm is a beast.
All of his food is something I would eat - I love to watch his stuff and his recipes are great
As for Joshua Weismann - I love the concept of his stuff - but his recipes never work out right - I don’t think he posts the correct recipes - I’ve also read that about his printed book
I like the French guy, Alex - he gets behind the science of the food sometimes- a lot like Alton Brown
Babish is ok, and I’ll watch Sam the cooking guy occasionally
Husband likes the Meat Church guy

I like channels that are down to the point with their videos. Mad Scientist BBQ is who comes to mind when I say this. He’s great at what he does and is a wealth of knowledge, but he will drag on for 45 minutes talking about a pork butt and his videos tend to miss the forest for the trees. Malcolm Reed, Kent Rollins, and Chef John (food wishes) are some of my favorites.
There is a channel called “Louisiana Cajun Recipes” that I always liked. He cooks a pretty wide variety of Cajun and non-Cajun stuff, has a hilarious sense of humor, and does a good job explaining things. I believe he had some health issues and doesn’t do as many videos anymore which sucks.

Most of Guga’s videos are pretty entertaining, but I find his voice inflection, or lack of, to be annoying. But to answer the question, I like Malcom Reed, Kent Rollins, Cajun Ninja, Meat Church, and BBQ Pit Boys have a couple of decent recipes, but most don’t appeal to me.
