What is your #1 Comfort Food? For us it might be Potato Soup (photos)

Here is how we make it

Start with a few potatoes (2 cups), some celery (1/2 cup), onion (1/4 cup) 2 Tablespoons butter,









Sauté until tender and add potatoes, then 2 cups water and a teaspoon of salt.





Cook until the potatoes are fork tender.





Add Beurre Manie 1 Tbs. butter and 1 Tbs. flour and cook until the sauce is thick.









Add 1/4 cup milk and cook a few minutes.





Add 1/4 cup heavy cream and cook until thick and creamy. Taste for seasoning and in this case, add another teaspoon of salt and some black pepper.





Serve with shredded Sharp Cheddar Cheese



Plus bacon, chives and sour cream





You know me. I like black pepper.

Love having your posts on the board again MD! Looks great. Trying to trim some carbs, wondering if using cauliflower for half the potatoes would work.

Gumbo for me, particularly chicken/andouille/okra in a dark roux based sauce and thick and hearty, not that soupy type gumbo.

Close second is jambalaya as I just finished a good size bowl of it when I got home. It warms me up from the inside out.

I love my mom’s potato soup, she puts good ham, bacon, and green chili’s in hers, gives it that extra winter kick...she used to always make it for us when we went hunting

I was going to say chicken baked in a casserole pan with rice mixed with cream of mushroom soup then I saw meridian's photos and felt too inadequate to reply.

I don't know if I have a number one comfort food, but gumbo is up there.

We make a cream of cauliflower soup that is pretty much exactly this soup with no potatoes 100% cauliflower. Now I want some of that tomorrow night!
