I love potato soup with all the topping accoutrements. I’m different from lots of folks because I prefer it puréed. I don’t like lumpy potato soup.

Pretty sure that’s how my mom did it or diced them so small they cooked down... I’ll try to get recipe to share

I cut mine in different sizes so some cook down while still having some chunky ones.
I also brown some bacon just before the onions to give the soup a little more depth. Just a personal preference. Otherwise I cook it pretty much the same as OP.
My #1 comfort food is chicken & dumplings. They are insanely easy to cook.

What kind of potatoes did you use? or does it matter? with the skins off in the picture I can't tell for certain.

Truth is, three of the potatoes (the rounder ones at 11:00 4:00 and 6:00) were Irish (smallish new potatoes) and the other three were Russets (actually the smallest Russets we had in the pantry - to use up the small ones).

That was what we had in the pantry.

Sorry I didn't answer your question. To me the potato use din my potato soup matters none at all. To some, it likely is very important. For them, I do know "Boil red" & "Bake Russet" To Fry? IMO - Old fashioned way is/was Red and modern is Russet?

Not my posts - It is me He doesn't like. His downvotes bring me great comfort and I am unhappy until they show up (like the warmth of the morning sun).

Yeah, the variation of the sizes also contributed to my confusion. I recently did a Potato and Leek soup and I used yukon golds, I really liked the flavor of that variety.
