Yep. Check out Ballistic BBQ or Ballistic Burger on YouTube. He does a few of his burger cooks on his griddle. I know he did one video recreating the most popular smashburgers from restaurants called "Smashburgers 10 Ways"

So much better if you do the real ribeye and freeze and slice then chop on the griddle. You get the fat rendered for flavor. Put the cheese on and a spray of water then pop the dome over it for a minute. The nice thing about a griddle is you’re also doing the onions and peppers at the same time.

Buy a full PSMO tenderloin at cost co.
Butcher it yourself, and you'll have a whole chateaubriand for a date night, 6+ tenderloin filets, and the chain/trimmings to make 4 or so cheesesteaks.

So Saturday night I tried out smashburgers and I probably won't make burgers any other way from now on. It was damn good. I will have to check out the videos when I do it next time. I kept it simple this time around.
Yesterday I went with fajitas. Usually I buy my own flank steak and marinate but Market Basket has a sale going on for a box of everything you need for fajitas @ $12 so I couldn't resist. It came out pretty good for pre-seasoned meat.
My next cook will probably be fried rice and then I will try philly cheese steak since I've never done that before.
I will have to load up on coal the next time lowe's has a sale because I'm burning through it quick with all these cooks. I've probably used the griddle more than the actual grill on my MB gravity series.

I don't really have it in measurements but I use the following:
Cold from the fridge white rice
Eggs
Onions
Bean Sprouts
Green onions
Garlic
Butter
Salt
Pepper
Soy Sauce
Hoisin
Rice wine vinegar
Sesame oil
Sesame seeds
I cook my vegetables first.
Then eggs.
Then rice.
Then I add the sauces and seed(soy, vinegar, sesame oil, sesame seed, salt, pepper).
Hoisin goes in towards the end.
Green onions at the end are a nice touch.
I have made it a lot. After tweaking over time, I use very little soy sauce. The brown color really comes from cooking everything on the griddle.
I use a good amount of salt and pepper.
You need to play with the measurements too.
I use an unhealthy amount of garlic butter(but it's not really that good if you go the healthy route).
Sesame oil, hoisin and rice vinegar I think are a must.
If you make it I recommend going light on the soy, vinegar, sesame oil and try it. You can always add some when towards the end with the green onions and toss it around on the griddle another time until you nail the flavor.

This is essentially what I was asking. The few times I've made it in the past it wasn't quite restaurant quality, and I think it was due to the soy overpowering other ingredients. I've tried cutting back but maybe need to cut more. Thanks.
