Small trailer in Royce City called Smoke Sessions BBQ has better brisket than Franklin. Was named to the Texas top 50 a couple of times now.

25min East of Dallas just north of 30

Franklin is damn good. Smoke Sessions brisket and beef rib are better

I will say that the Tipsy Texan at Franklin is one of the best barbecue sandwiches I've ever had

Smoking meats is an art. Anyone can follow a recipe, but only the artist can match the final work of a legend.

This is why, by the way, electric pellet smokers will never get it done. People who use electric smokers are denying themselves the chance to learn the art of the smoke.

But keep using that outdoor plug-in oven and see how many people crowd your yard to confirm that it’s “just like Franklin” because you used his recipe.

My question was more for the people who own and operate BBQ restaurants to elevate their product, not the average home cook.

What smokers are you looking at?
The ones he uses at his place. I've watch video of him making them. They are LP tanks. He uses no insulation whatsoever.

I don't think he meant he uses something inside as insulation, just that they are custom made very well unlike what most consumers will buy for the house. Not to mention thicker gauge steel.

Will do! My friends rave about my BBQ, which is good enough for me as someone who loves to sleep and has a full time job.

Which is a form of insulation allowing heat control/consistency.

Can’t believe I even have to clarify that

Try keeping temp on a $200 academy smoker that you’ve retrofitted to tighten seams. shite won’t come close to what that tank Franklin is using would be like.

Why? They are not insulated. You know there are lots of insulated pits, right?

No one would disagree wit that. That's not an insulating issue.

Whatever you say

The thickness of steel certainly results in a metric ton less heat loss than average person’s grill. Whether you’re doing it through vessel wall, blanket, whatever

Would be an interesting study, but I still don't think that has much to do with it at all. How think are those tanks anyway?
