Small trailer in Royce City called Smoke Sessions BBQ has better brisket than Franklin. Was named to the Texas top 50 a couple of times now.

Smoking meats is an art. Anyone can follow a recipe, but only the artist can match the final work of a legend.
This is why, by the way, electric pellet smokers will never get it done. People who use electric smokers are denying themselves the chance to learn the art of the smoke.
But keep using that outdoor plug-in oven and see how many people crowd your yard to confirm that it’s “just like Franklin” because you used his recipe.

My question was more for the people who own and operate BBQ restaurants to elevate their product, not the average home cook.

I don't think he meant he uses something inside as insulation, just that they are custom made very well unlike what most consumers will buy for the house. Not to mention thicker gauge steel.

The thickness of steel certainly results in a metric ton less heat loss than average person’s grill. Whether you’re doing it through vessel wall, blanket, whatever
