I used to spend a lot of time building my sauce but here lately I’ve been using Cajun Power sauce. I follow the directions and usually add a touch more seasonings to it.
Lasagna is pretty simple, I don’t know why people get intimidated by it. I will say that seasoning your ricotta will make yours stand out from the rest. To a 15oz tub of ricotta I’ll add 1 egg, fresh chopped parsley, and garlic salt to taste. Put a little bit of sauce in the bottom of your pan just to get it greased then layer cooked lasagna, ricotta, meat sauce, mozzarella. Repeat until your pan is full, or you run out of ingredients. I bake mine at 375 uncovered for about 45 mins or so.

Friend made me a small pan of it. Used Bell pepper, mushrooms, and olives. I couldn't eat it.

I would try it and might actually like it… but I prefer to keep it simple!

This is a really good recipe:
All-Recipes - World's Best Lasagna
Subbing out the half sausage for all beef I'm sure would be fine.

Step it up a notch by also using Italian sausage. I make my own sausage and will not case up what I plan to use for red gravy dishes.
I make small meatballs, much like when making Swedish Meatballs, brown them off in a bit of olive oil and then add them to the gravy.
Also, make your red gravy pretty thick so your lasagna doesn't turn out runny.

I'm not sure how or why cottage cheese ever ended up in lasagna. My mother recently made the Pioneer Woman lasagna that was shared and it was very average. The All Recipes one shared above looks excellent and the Emeril's one is good as well.

if you can layer things in a casserole dish you can make a fine lasagna. I like to add a little (very dry) chopped frozen spinach to my ricotta and as the others have said, try at least 1/2 Italian sausage browned out of the casing…it makes a huge difference
Number one effort should be to make sure you’ve eliminated all sources of excess moisture. Drain your ricotta, use a very thick sauce, wring out spinach if using. The only way to ruin it is to make it runny

This is the one I like. Sub in some cheddar cheese for some of the mozz if you like.
All American Lasagna
1 lb Ground beef or Italian sausage
1 clove garlic, minced
1 Tbs dried basil
1 1/2 tsp salt
16 oz tomatoes
12 oz tomato paste
10 oz lasagna noodles
2 eggs
3 cups fresh ricotta or cream-style cottage cheese
½ cup grated Parmesan or Romano cheese
2 Tbs parsley flakes
1 tsp salt
1/2 tsp pepper
1 lb mozzarella cheese, sliced very thin
Brown meat slowly; spoon off excess fat. Add garlic, basil, salt, tomatoes, and tomato paste. Simmer uncovered 30 minutes, stirring occasionally.
Cook noodles in large amount boiling salted water till tender, drain, rinse. Beat eggs, add remaining ingredients, except mozzarella.
Layer half the noodles in 13x9x2-inch baking dish, spread with haft the ricotta filling, add half the mozzarella cheese, then half the meat sauce.. Repeat layers. Bake at 375° about 30 minutes (or assemble early and refrigerate; bake 45 minutes). Let stand 10 minutes before serving.
Servings: 8

Cajun ninja’s lasagna is my wife’s favorite, I use Italian sausage over breakfast sausage though.
It’s a day’s work.

If you want good lasagna and don't have the time to make and don't want to heat your kitchen up in this heat wave, run by Cannatella's on Gov Street. If you get there earlier enough you can pick it up fresh.. heck, even their frozen is delicious warmed over.

Try this one when you’re really bored and have nothing to do.
