I have my manager at my restaurant throw all our leftovers away. If I allow employees to take it they will intentionally mess up an order or cook too much so there is always something to take home. If you give it away at closing to someone you think may need it those same people come back at all hours of the day expecting it and bugging the register workers about it.

All the burnt and old burgers went into the chili when I worked at Wendy's.

Well that is the original reason Wendy's came up with serving chili. It allowed them not to waste the burgers.

I saw a deranged person putting stuff in his pockets at the Jason's Deli salad bar, go into the bathroom, then come back out and put the stuff in his pockets back on the salad bar. I don't think he was trying to do anything to the food he was just insane

Piccadilly basically reheats it for lunch meal . Breading is taken off fish and chicken and used in gumbo and jambalaya . Rolls go into bread pudding . Desserts go into a dump cake . Very little is tossed ..

Unbelievable the amount of fresh produce and food is thrown away in trash.

non buffet the goal is no leftovers or you aren't planning properly, in seafood I would grind up leftover to use in stuffing.

We tried to buy it one time and donate it, but they refused stating by policy it must be thrown away.

Bread ends and if I'm remembering correctly, any that were not perfect, but still edible.

Usually you know how busy you’ll be on an average day and try to cook the right amount. Towards the end of the night they can cook less of each or say they’re out of it for the day.

You've been really salty the last day or two. Everything ok?

My wife's grandmother raised 5 children while her husband was off fighting wars in foreign lands, and spent a career as an elementary school lunch lady because she just never had the wherewithall to get into Harvard and break glass ceilings and eventually become appointed to the supreme court.

At a restaurant my wife once worked at, they took all the leftover rolls, cornbread, and hushpuppies, threw in a jar of pimentos and leftover gravy and turned it into tomorrow's cornbread dressing. It was wonderful.

The ashes from Miss Effie's cigarette may have been the secret ingredient.

Grocery stores throw out a ton of old produce that didn’t sell before it spoiled, not to mention the deli food!

In the NOLA metro area, about thirty years ago, a call came to a TV station from the North Shore that they had found a huge amount of quality silverware buried in the ground. Was it stolen?

IIRC it was from the Hotel that had the Blue Room, and all waste food was dumped into huge barrels and moved to the North Shore where it was fed to hogs on a huge farm up there. And nobody went through to check for silverware, and the pigs didn't eat it.
That stopped when "laws" required all foodstuffs to be boiled before they were fed to hogs.

Nope. They pull the pans from the buffet, wrap them with plastic wrap and stick them in the cooler. Pull them out next day and back on the buffet.

Ryans Buffet was a customer of mine back in the day. Watched them do it many times.
