It’s hilarious when people say NO isn’t like Cajuns. Yes, cultures are different but the lengths people on this board go to try to separate New Orleans from Acadiana is telling. It’s like they are the kid on the playground who always says he can run faster than you and he will never quit arguing it.

It's think it's pretty telling of the rich cuisine in southern Louisiana that folks argue to such a degree about this. They definitely know what they're talking about - all of them!

We all know it’s not the same but to champion the idea that NO cuisine can’t hold a candle to “authentic” Acadiana is just a stupid argument.

This board takes the fact that the culture is different and uses it to disqualify anything NO does because.

That's the Lafayette area you're thinking about pal, not Lafourche/Terrebonne. Nobody does that shite down here.

You would think by now, people on a Louisiana message forum would know the difference between prairie and bayou.

Beef cattle were big in earlier prairie Cajun days, so beef and pork. Fish and seafood for bayou? I don’t think of Lafayette as prairie or bayou, but a combo. Prairie Cajuns are in Eunice, Mamou, etc.

In SELA, Nola, Metairie and Northshore specifically, Seems like I never saw dips (typically ketchup, mayo, Worcester, black pepper) around crawfish boils until around the mid 00s but have seen it presented increasingly since then to the point of almost being ubiquitous now. I like it, but don’t need it.

I have only seen it a few times and it was always people from Mississippi introducing it to the boil. 2 different groups of people, from 2 different areas in MS. Neither one pushed it on others, just made it for themselves and had some people ask what it was. They would try it, like it, and use it from time-to-time.

I never tried it simply because I am not a fan of adding condiments to food unless I'm trying to hide the flavor. But I also don't care when people do things differently that I do.

Whoa, this is a family site, GG!

My ex was from Tolbert, near False River and that was the first time I had ever seen the "dip". Meh.

When I opened this thread, I also thought of a more substantial dip (cream cheese, crawfish, etc.) but the mayo/ketchup thing is fine for the sides. If you don't like it, don't dip it.
