What are your favorite vegetarian dishes to cook?

I am trying to incorporate more vegetables in my diet and enjoy branching out in my cooking so I am looking for new ideas. My current favorite is chana masala. Super cheap and easy.

Personally, I really like grilled or roasted vegetables.
I'll take a pan and oil it with olive oil then layer it with the following vegetables that I drizzle with olive oil in a big bowl and add Slap Ya Mama, garlic powder, black pepper, oregano, sweet basil and parsley flakes.
I use thick sliced onion rings, potato wedges, sliced carrots, sliced zucchini and yellow squash, broccoli, Brussel sprouts(cut in halves) and any other vegetable you like. Spread them out in the pan in a single layer and not heaped so they cook evenly.
Toss them in a 425 degree oven until they are tender and done to your liking.

Butternut Squash Curry
1. Cube and roast butternut squash in oven with oil and salt and pepper
2. Saute vegetables until soft (onions, peppers, garlic)
3. Remove or push to the side all of the vegetables
4. Add red curry paste to pot and brown to release aromatics
5. Mix vegetables back in with paste and add 1 can of coconut milk
6. Add any additional aromatics, bring to a boil, and add butternut squash
Serve over rice or cauliflower rice if your keeping it low carb

Homemade hummus plate with roasted, fresh, and pickled veggies. I basically took Ethan Chlebowski's version and left the meat off to make it more of a side dish.
Don't even really need pita or naan, all the veggies are filling enough.

Falafel on Pita
Ramen, though I do use a dashi broth which is fish based.
Kimchi Fried rice w/ thia chili roasted brussells
Vegetarian chili (cauliflower, broccoli, carrots, beans)
Veggie tortilla soup

Was waiting for you to show. Question, have you ever used quinoa as substitute for ground meat in tacos? I have seen recipes where you season it with chili powder, cumin etc mix in a little salsa then spread it out on a sheet and brown it in the oven.

No, I'm not a fan of quinoa. I do make red lentil tacos with crunchy shells that are decent. Best veggie taco I make is slather cauliflower pieces with a mayo, chili powder mix and roast. Put that in corn tortillas with a chipotle mayo, tomatoes and enjoy.

I’ve made a three bean chili that received the stamp of approval of a few vegetarians. I used kidney beans, black beans, and pinto beans and all the usual chili seasonings and spices.
Rice pilaf with toasted pecans or pine nuts, peppers, mushrooms, onions, and grated carrot. And not low on the seasoning.

One of my favorites is 15 bean soup. I get it at the local market and the 1 lb. bag comes with all the beans and a seasoning packet and it's up to the cook what to add to the pot after that. Being from N.O. I naturally have to add the trinity and some garlic and usually do add some kind of meat-----either seasoning ham or sliced smoke sausage, but I've made it without meat and it's still damn good.

A few weeks ago I made fifteen bean soup, two pounds of beans with ham hocks and sausage and one pound of the beans for a vegan version. The vegan version was so good!

-spinach
-garlic

-butter
3-4 zucchini spiraled in to noodles. Sautee garlic (3-5 cloves) in olive oil. Cook zucchini noodles for a few minutes. Don’t overcook. Dry the zucchini noodles with paper towels as much as possible before cooking. Throw in tbs of butter. Put in large handful of spinach. Cover with a lid. Does not take long to cook. Serve and garnish with a little bit of grated Parmesan.

It's not so much of a dish but I've been adding some snap peas to my meal prep for work. Just boil for a minute and throw in a wok with some seasoning (preferably with garlic) and a little soy sauce and lightly stir fry.
It's my new favorite green to accompany my protein for work lunches.
