I grill a lot of what comes out my garden in the summer months and what I need to buy at the store that's not in growing season, or don't grow.

Yard Long Beans, zucchini, yellow squash, okra all from my garden.

Asparagus, onions, corn, mushrooms, etc. from the store.

Sweet potato/brussell sprout hash.

I usually make it with bacon, but if we are going no meat, i’ll share that style.



Sauté onion for 5 min in olive oil. Add diced sweet potato and cook for 5-7 min. Add halved brussell sprouts and cook for 5 or so minutes. Season along way. Add a couple glugs of balsamic vinegar at the end. Really easy and healthy.

Another option is taking these same 3 veggies and roasting for 25min in 400 degree oven. These 3 veggies compliment each other beautifully.

Edit: This is generally a side dish with some pork or chicken, but it is filling and could be a good meal.
