That recipe scales very easily. I made a 1/3 (4 egg) batch this weekend for a friend. Works well. Also, the recipe doesn’t HAVE to be aged. It just mellows and matures over time. Fresh, it’s still hands down better than store bought. Tip, if you’re not going to age it, add 1/2-1 tsp good vanilla.

I made several batches this year. It came out better than I expected and it still is good even with it being not aged. Letting it sit for a couple weeks definitely makes it better. I can't wait to open a jar closer to Christmas.
I used an electric hand mixer and it took me under 20 minutes to make a batch.

You can scale it back and I still have 2 mason jars from last Christmas I can’t wait to break open over the holidays. Store bought is not even close.

I had a fresh half gallon of Southern Comfort Eggnog, so I gave your recipe a try. I did make one change, I added 2.5 oz. of bourbon as well. Wife (no pics) and I are used to the Aged home made eggnog recipe. I have to say it was excellent! It didn't make it to the end of the day! I may do another carton and let it age until Christmas!
