Ostrich deviled egg, I had a few small bites early this morning when I was making it for the egg challenge but tonight I’ll actually dig in along with some green beans

Thats a beautiful sear Chappy.


I did a cross between stir fry and fried rice. Its simply stir fry with big chunks of veggies and chicken, and I add brown rice and egg at the end.

I’m having chicken enchiladas and black beans. I’d frozen leftover enchiladas three weeks or so ago and we’re having them tonight.




Also, here is another dish I made for the egg challenge, but didn’t use.

Baked egg boats, or scrambled eggs loaf.

Basil leaves line the bottom, to prevent bread from getting soggy. Spinach leaves would also be good, plus pancetta, green onions.



Fill with whisked eggs (4, in this case), and more pancetta, green onions and cheese. Bake until eggs have set and cheese is melty.

Cheese Krystal’s. Haven’t had em in probably 5-6 years and they were fantastic.

Walked down to our new neighborhood BBQ joint.

Got brisket, turkey, jalapeno sausage and couple of sides...potato salad, jalapeno sweet corn, mac & cheese. Bread, pickles and onions, of course.

A frozen Jack & Coke for each of us, with a serving of blackberry cobbler for dessert.

First proper BBQ I've had in years. I'm so happy to be back in Texas
