I just put an eggplant and spinach (cheeseless, except for a little grated Parmesan) in the oven. It’s an experiment—I picked a bunch of eggplant, so I needed to use them up...and better half is tired of caponata. Sautéed the eggplant to soften, layered in a dish with spinach and uncooked noodles, and a big ol jar of Rao’s marinara. I’m hoping the noodles soften—we shall see.

Butterbeans, creamed corn, fish sticks and skillet fried cornbread. Country eating at its best.

Was going to make chicken piccata, but lost the desire to cook, so leftover white beans. I must have been too heavy handed on the salt with these things.

Fried catfish, shrimp, fries and hush puppies if the motivation comes back. Otherwise totinos pizza and beer.

Fired up the Blackstone again for chicken and steak fajitas for my family. We are having a “luau” for the residents at the nursing home where I work, so I volunteered to smoke a pork butt for sliders tomorrow since I had the day off today.

Update: the lasagna was surprisingly good, thanks to the Rao's sauce. Noodles softened just fine, though I did cook it an extra 15 mins just to be sure (65 mins total). Neither one of us missed the cheese--the eggplant was soft and creamy enough. Will definitely do again.

Couldn’t decide what I wanted for supper. Saw MD’s fishsticks and that was it!

They were fine. Sometimes food from childhood is just what’s needed.
