SO is still on a fast, so I had a frozen meal.

Truffle mac & cheese and it was freaking delicious.

Vodka waters. Plain water for him.

Hot chicken salad casserole, carrots and lady peas.



Plus the plates we set up and took to my 93 year old mom and the wife's 89 year old mom. (they never eat a lot, so it's probably two meals for them)

Spaghetti was made, but I had the sauce and meatballs with pan seared eggplant. Was too full to touch the French beans.

I have the photos on my computer and will post it tonight. However, just for you (don't tell anyone), here's the recipe.

Hot Chicken Salad

Ingredients

1/4 of a rotisserie chicken, pulled apart
1/2 cup celery, diced
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
1/2 cup mayonnaise
1/2 cup sour cream
1/2 can water chestnuts, drained and diced
1/4 cup mushrooms, diced
1/4 cup slivered almonds
2 tablespoons chopped onion
1 Tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup slightly crushed Ruffles Potato Chips, or 1 can french-fried onions

Optional:

Chopped green onions or parsley, for garnish

Directions:

Preheat oven to 350 degrees F. Pull apart chicken, dice onions, celery, mushrooms

Place chicken into a large bowl and stir in the next 11 ingredients (all except chips).

Transfer to a 9 x 9-inch baking dish that has been sprayed with Pam. Top with Ruffles or onions.

Bake, uncovered, until heated through, about 40 minutes. Garnish with green onions or parsley, if desired.

Serve hot, with a vegetable or two.

Cooking for one tonight so Smoked chicken sandwich with homemade bacon, some kind of vegetable chips from Costco and Elote.

We had dinner at Boudreaux and Thibodauxs in Houma. It was pretty damn good. Was nice to sit down and not have to wash dishes and clean the kitchen after.

I had the Stuffed fish, a crab patty sandwhiches between fillets of blackened catfish.
