Leftover roast beef pot pie. Tasty, but a slice doesn’t hold together.

Picked some fresh snow peas from the garden, spaghetti squash, mushrooms, ham in a creamy, wine-y, thyme-y Parmesan sauce

Taco salad, using leftover grilled chicken from a couple days ago. Fruit for dessert, sprinkled with a little pico fruta (a sample I got from Penzeys, its a blend of chile, lemon peel, sugar, citric acid, etc). It’s nice on mediocre cantaloupe and really nice on good pineapple.

I actually GOT the recipe from this board! It doesn't sound like it would work, but it totally does. Also, very few ingredients, healthy and it's super easy. The prep is the most time-consuming part. Highly recommend.

I use this one.

I tweaked it a little...I cut the shrimp stock with chicken stock...probably 2/3 shrimp, 1/3 chicken. It's a personal preference, it mellows it out a little bit. Also, I brown the sausage first and separately...remove sausage, add some butter, then cook down the veggies.

It's soooo good and really satisfying.
