Cooked down some onion and bellpepper and added ground beef and rice with seasonings and worchestershire. Side of green beans. Quick and simple dinner. Long day.

Just cooked two king ranch casseroles

One for me and one for the boy to take home. He told me today his power went out due to a storm last night and he was worried all the breakfast food he’d just bought would be ruined

He said that’s all he’s eating these days because that’s all he knows how to cook. I need to find some easy recipes for him. Maybe teach him how to brown ground beef

Eta any suggestions?

I thought my yankee roommate to make decent red beans and rice using Blue Runner Beans.
If that's possible then I think anything is really.

I had baked salmon, Lima beans, and a romaine salad with olive dressing and Parmesan.

For the boy who needs to learn to cook, figure out exactly what he can do and build off of that. I’m sure he can boil pasta, show him how to slice some mushrooms and slice zucchini to simmer in a jar of prefab marinara for a veggie pasta topping. Introduce him to the power of good cheese: real Parmesan for that quickie veggie pasta, and sharp cheddar for a grilled cheese with a slice or two of crisp bacon and tomato tucked inside. Explain that a ham and cheese on white bread is way better when toasted and pressed in a skillet, and that the jar of pasta sauce can be used as a base for many simple meals (put some in a skillet, make a few divots, break eggs into divots, pop on a lid and cook until eggs are as set as you like).

Canned beans (many already seasoned and ready to eat), tuna, boxed Mac n cheese.....

I suggested rb&r and he said he doesn’t like them

But I think that’s just because I never cook them and he’s only eaten my mom’s who absolutely can’t cook. I need to make him some and change his mind. He’s not picky at all

Those are good suggestions. I need to teach him to boil pasta at least

Mingo, a crock pot is honestly a really good idea
