Instant pot shredded chicken tacos with strawberry mango salsa. The green stuff is called nutty green rice or something like that. Mrs Coater was keeping it healthy tonight

Sure

The chicken was pretty straightforward
3 breasts
1/2 tsp sea salt
1/2 tsp garlic powder
1 tsp taco seasoning
1.5 cups chicken broth
3 chipotle peppers in adobo sauce
2 tbsp adobo sauce

Dice chipotles. Rub chicken with salt, garlic powder, and taco seasoning. Add broth and adobo sauce. Set instant pot for 10 min at high pressure. Allow to naturally release pressure after 10 min. Shred chicken.


The star was the salsa.
1/2 cup diced mango
1/2 cup diced strawberries
2 small diced ripe avocados
1 tbsp chopped fresh cilantro
1/2 jalapeño deseeded and diced
Juice from one small lime
2 tbsp finely diced red onion
1/8 tsp sea salt

Nutty green rice (for completeness)
1 cup brown rice
2 cups water
1/4 tsp salt
1/2 cup almonds
1 bunch parsley
1 clove garlic
1.5 tbsp lemon juice
1.5 tbsp olive oil
1/4 tsp freshly ground pepper
1/2 cucumber diced for garnish

Cook rice with water and salt. While rice is cooking blend almonds, parsley, garlic, lemon juice, olive oil, pepper. Stir together after rice cools. Add cucumber for garnish.


ETA: next time I would probably double the rub on the chicken
