Pounded some chicken breast as thin as I could get them, seasoned well, spread roasted garlic followed by a mixture of ricotta cheese and Parmesan cheese, then baby spinach, rolled them up and put in a baking dish and covered with homemade tomato sauce and baked, topped with a little mozzarella cheese.

Not sure what it is called but it was damn good, made enough for lunch a few days this week

That damn cracklin thread gave me the envie so while I was out that way this afternoon I stopped at Billy's. I picked up some chicken breasts stuffed with spinach and cheese and a pork loin stuffed with pepper jack and wrapped in bacon. I put that on the pit and the wife made pasta salad for the side

Roast and cauli rice and gravy. Green beans. I am currently obsessed with cauliflower rice, now that I can make it turn out non-mushy.

We had our grandkids with us, and in a burst of grandfatherly gusto I bought a big box of corndogs and then the grandkids left and we still have most of them. Now it is my responsibility to get them out of the freezer and free up the space they take. If you go to the right place, you can buy one killer big box of corndogs.

Too much information shared.

Corndogs and Tomato soup.

You will hear this Meal reported several times again over the next few weeks and now you will know why.

Chicken parm, angel hair with olive oil, pepper, garlic, romano, green salad

Did a double decker chick parm...cut/pounded breast to 1/4", pan fried, but stacked them with a slice of provolone in the middle and on top...great new twist
