Something with leftover boiled crawfish tails.
The crawfish were small (but flavorful) and so I don't want to use them in anything that requires much more cooking because they'll be way overdone.
So far I've had crawfish in a dinner salad, crawfish salad (like tuna salad, with hardboiled eggs and such), and as an addition to some hot soup. Just dropped the tails in and let the heat from the soup warm them.
Might do another dinner salad or maybe an omelet.

I'm the weirdo who doesn't really like crawfish beyond hot freshly boiled.

Me, too. But while I was thinking about what to have, I had a low carb wrap with crawfish, butter lettuce, red onion, and a little mayo. Darn good.
LouLa, my husband only likes fresh, hot boiled crawfish, too. Just means all the leftovers are mine!

I made eggplant, acorn squash and onions seasoned with Indian spices and peppers and smoked, along with grilled broccoli, and cashew based, onion, garlic, potato Alfredo sauce substitute served on cous cous.
