I'll be glad when the Farmers' Markets start bringing in okra. I could go for some fried okra and some garden fresh tomatoes with some home brewed iced tea.

So we've injected a roast and stuffed it with garlic and fresh herbs.
We took sea salt, mixed some more minced sage, oregano, and rosemary from my garden, and blended it all with egg whites.
Placed a layer of the mix down, laid a bed of sliced onions, and set the roast on top.
Then we completely cover the roast with the mixture to form a shell.
In the oven, the mix will harden into a shell and contain the moisture, providing a tender and succulent roast.
