I made a French onion soup for this week's cold snap.
Topped with homemade crostini and a blend of cheddar and gruyere.
Will have some egg nog with a healthy splash of bourbon for dessert.

Made some gumbo. How’d I do baws?
Brown the andouille
Smoked chicken
Dark roux
Added the trinity
Added my homemade chicken stock and simmered before adding the chicken and andouille
Served with rice and file

Spending the week on Dauphin Island, we ate out. Fried crab claws and a platter. Brought home plenty of leftovers. :)

Haha thanks. I had a longer than usual lunch break today for work, so I was able to chop the veggies and make the roux during that. I smoked the chicken and browned the andouille yesterday and just kept it in the fridge.
