Ralph and Kacoo’s Shrimp etouffee. My parents have an old R&K cookbook from probably the late 80s or early 90s. My dad cooks it once or twice a year, but this is my first time making it. Maybe next time I’ll make some R&K hushpuppies to go along with it.

Yeah man. I’m from Natchez, so if we went to the big city, it was Jackson or Baton Rouge. And 8/10 times we would eat at the Ralph and Kacoo’s. I’d get the Crab Au Gratin or etouffee. Good times.

Nothing fancy and I used canned corned beef. Shredded or diced corned beef is better but I always keep the canned stuff in the pantry and it’s what I had.
Dice up some Yucon gold potatoes and some yellow onion. Throw a little oil and butter in a cast iron skillet, add in the potatoes and onions, season with black pepper, garlic powder, some seasoning salt, etc. but watch the salt. The canned corned beef is pretty salty. Fry/ sauté the potatoes and onions until they have some color and the potatoes soften. You can add a little water if the potatoes start to stick. Add in the corned beef and stir until combined. Stir in some green onions and cook until the corned beef is heated through. After it’s warmed through, I like to let it sit in the pan undisturbed until the bottom starts to crisp and then I’ll throw it under the broiler just long enough for the top to get crusty. :)
