Threw a soup together. Italian sausage, sun dried tomatoes, kale and spinach. Chicken stock and a little cream.

Lots of snow and I wanted something warm without the hassle of cooking dinner, so I turned to my pantry.

Rao's Tortellini & Vegetable soup
Rye toast with butter
Vodka waters

I started to make one soup but had to pivot due to some past their prime ingredients. Came up with a bisque like concoction with langostinos. Too much dill, but had potential.

Chicken and Dumplings
I just saw a low carb version that used strips of low carb tortillas for dumplings. Think that could taste good? I didn’t grow up with this dish and have only made it twice.

Sous vide flap steak. Not sure on the sides yet. I am leaning towards air fried onion rings.

Chef Salad and a Little Debby Cookie.

It's 19 degrees F here with freezing mist. Hopefully it will end in another hour or so. Hope everyone makes it through the night. Lots of power out in the Delta but I think it has moved past them toward Starkville.

Bring your pets inside. Too cold out there for them to struggle through.

Ms. Squirrel. Our friends in Mt Home called yesterday and said it was 4 degrees there. I'm sure really chilly at your house too.

Yes MD we were at -6 last night.

What do you think about the low carb tortilla chicken and dumplings?
Much like a low carb tortilla would not be your first choice for pizza crust it may not be a first choice for dumplings but it should be as delicious as any other low carb recipe.
