Leftovers. Had a pork roast sandwich for breakfast, so none for supper. Black eyed peas, rice, Mac & cheese and slaw. :)

Finely diced mushrooms, pearl onions, pate, rice. It was almost like a boudin filling or dirty rice.

We needed to use our cilantro, mint, fresh jalapeno, spinach, bell peppers, etc. so we made more soft spring rolls, which are kind of fun. Plasticky circles that turn soft in water, after about 10 seconds. You can put anything in them and they are 16 calories each

Just trying to use up leftover remnants before we do another big cook.

Smoked chicken & andouille gumbo with okra. Stock made from smoked chicken bones (cut up) and skin in a pressure cooker w/ onions, celery,
& jalapeno peppers, then strained.

Potato salad

Tossed salad

Lotsa red wine

No Rice

It may sound strange, but almost like a boudin/dirty rice concoction. Pate, finely diced mushrooms, leftover seasoned, grilled and diced chicken, Jeera rice, spicy JD breakfast sausage. It was delicious. I think we could chill in the future, roll in panko, throw in the air fryer and make boudin balls!
