The jackfruit in the produce section is more fruity and sweet than what I use. There was a thread a while back that people were saying they really liked that form of jackfruit but you eat it like any other fruit. I buy Young, unripened jackfruit in a can.
It is cut into 1-12" cubes and packed in the can.I break it apart and find the hard seeds and toss them. There aren't many seeds so it's not a big deal. I then marinate for a couple hours in a bbq sauce water solution, about 1/8 cup sauce to 2 cups of water. Maybe 1/4 cup sauce, I just eyeball and taste. Then I dump it in a cast iron skillet and bring it to a boil. Meantime I get the smoker going and once I bring to a boil I stick the cast iron in the smoker and give it about 30 minutes in there. Then I drain and transfer the jackfruit to a toaster over at 450 and cook til it gets a little char on it. I make a mayo BBQ sauce mix to spread on the bun,shovel some jackfruit on there, add pickels and eat up.
By itself jackfruit has the texture of pork or chicken but doesn't have much flavor. The smoke and bbq sauce really give it the flavor of pulled pork.

What is the point of all this?
Why not just buy a pork butt?

I think Jackfruit tends to not clog up your arteries like pork.
