That duck sauce piquant looks great. I have never made a sauce piquant but some of the recipes I have seen call for a lot of tomato sauce. How much tomato sauce did you put in that recipe? By the color of it it looks like it would taste like a good gumbo. Is adding the tomatoes the only thing that make it different than a gumbo? Forgive my ignorance I’m born and raised in North Alabama.

It's basically just wood ducks and Rabideauxs sausage cooked down in a gravy. Added a can of rotel and a can of tomato sauce.

Brown ducks well
Brown sausage
Hit with onions and cooked down
Add garlic, celery and bell pepper
Add a little flour (or dark jar roux)
Chicken stock
Shroom
Aforementioned tomatoes
Let blop in black pot until ducks start falling off the bone
