I attempted a tomato basil soup. I completely botched it.
I added a few carrots and that threw the taste off completely. It was also very acidic. Any tips on how to make it less acidic next time?

A pinch of sugar or brown sugar helps.
If you don't want the sweetness, you can add a pinch of baking soda. Use it very sparingly, though.
Salt works too.
I add a splash of balsamic or worcestershire sometimes to add umami and it seems to help balance the acidity of the tomato.

Did you hit it with heavy cream at the end? Most tomato soups that are creamy and comforting have cream in them.
I normally do a 50-50 mix of oven roasted roma tomatoes + (not roasted) San Marzano whole peeled canned tomatoes. On the same pan with the roma tomatoes, I sometimes roast a head of garlic and onion or shallot too. Otherwise I saute those.
Hit it with some chicken stock, blend until smooth, season to taste, simmer for a bit, and then cut the heat and add heavy cream. A little goes a long way, and it cuts the acidity well.

That seems to be exactly what I did except for I added carrots and I blended before they were cooked through. I may try again without carrots.
I placed about 12 halfs of Roma's hit it with SPG and some OO. Also did a head of garlic.
I sauted some shallots with butter, added a can of san marzanos with half a container of vegetable stock. Then added the roma's and garlic. Added a splash of balsamic, sugar, and heavy cream at the end.

I didn't eat mine on a roll, trying to cut some carbs. They were actually better than I remember them. I lined a tin pan with some onion and pepper, seasoned with Montreal Steak Srasoning, put the brats on top, poured 2 beers over them and covered with foil. Let that go about 45 minutes on my gas grill at 400, then I grilled them for about 15 minutes. They were excellent.
