Rouse's had some great looking tuna today, so seared tuna with a soy lime jalapeno sauce and avocado with brown rice.

I whipped up a remoulade and a cocktail sauce.

So grateful for our LA families who send us crab boil on a semi-annual basis

Vodka waters with dinner, red wine for dessert.

Friend,

I was thinking about Meridian Dog last night, hoping and praying he is well, and hoping to soon read his recipes and see his pictures. I thought about how he might want some Oysters Mosca tonight, so I tried to make an order. Oysters Mosca is one recipe I have never mastered. It seems so simple: oysters, bread crumbs, Parm and some spices. But no recipe I have ever tried is close to the original at the restaurant.

Here was another failed attempt:

I started with 24 oz of drained fresh oysters from one of the Bucktown markets that Mother purchased yesterday. I added it to 2 tbsp butter, 1 tbsp of olive oil, 4 cloves of minced garlic and some shakes of Great Value Italian dry spices.



I cooked on medium for a couple of minutes before adding 1/2 cup of Italian bread crumbs and 1/2 tsp of cayenne pepper. I gingerly mixed it in while adding an ounce or two of the oyster juice I had left from the container.



Then I added 1/2 cup of freshly shaved Parm and a quarter of a blood orange because I could not find any lemon juice.



Once mixed, it entered the oven at 400 for 20 minutes.



And for the famed Meridian Dog fork view:



It was average tasting. It did not reach the heights of the original and I am growing weary that I ever will be able to recreate that dish.

Hello guys. Thanks for your concern and prayers.

I hope I am getting better, but it is really slow going. Still not much taste or smell. Breathing is difficult and I am in downtime most of the time. We have a Pulse-Ox sensor and my blood oxygen is running about 88-89, when it normally runs 97-99. I have what is the driest mouth and throat I have ever experienced no saliva, nothing to swallow and a constant urge to clear my mouth. My eyes also hurt as much as they did the first day of this mess.

Today I learned that my brother in law in the Houston area has tested positive for the virus. They have tested my sister, who is showing light symptoms. I guess we will know tomorrow. They spent most of the weekend keeping their grandkids.

The wife's mother has dementia and is at the stage where most of the time, she doesn't know either daughter, can't find the bathroom, which is attached to her bedroom, can't get out of her bed without help, or even realize she is messing on herself. She is sleeping all the time, with several 30 hour stints over the past two weeks and has pretty much stopped eating. The daughters are sharing 24 hour stints (24 on and 24 off) so that there is never a time when one of them is not with her in her home.

I guess our plate is full. Too full to devote much time to here.
