No doubt. It is the proper way to serve at a truly high end place.

You have a right to feel however you want...I found your initial review fair and could actually see someone thinking exactly what you said.
However, if you really agree that places like Tsunami, Flemings, Ruths, and Red Fish Grill are better; we will just agree to disagree then.
Anyone who would list these as better restaurants simply doesn't like the style experience Stella! gives you...which is fine.
IMO, there is NO WAY that the restaurants you listed as some of the BEST IN THE STATE should ever be listed as such....JMO though. To each his own.

I didn't say they were the best in the state, just that I would rather spend my money at these places that I have been rather than Stella. That is all.
The experiences at all of those places listed also reflect special events in my life such as: 21st birthday, bachelor parties, dates with special lady friends, etc. The role of the restaurants were played perfectly. Stella just wasn't my favorite.
Just bc I didn't think it was the greatest doesn't mean my opinion isn't valid and that it's "not for (me)". Price also plays a large factor in my preference. I think that aspect is important. Maybe not to the OT ballers, but to me that was a back breaker. I'm also still a broke college student... But I don't have any debt at least!

Makes sense. I'd pay the price to try it, but like I said earlier, Brag feels the total opposite. He has no desire to try it simply due to the price.

Has no bearing on a best category. I think Stella is a graet restaurant. It is on another level in its ambition than any on your list. Not even in the same category. Really only August and MiLa are comparable in that regard.
Hmmmm, maybe. The ambition part may be hard to quantify. Frankly, I need to give Stella another chance. As much as I dine out in N.O., I've only eaten there once and have had no great desire to return. The meal was fine. But it certainly was not transcendent, imo. Plus, I'm not particularly impressed by the setting nor atmosphere. I'll duck.
I would say that MiLa and August are preferable for my taste. But so are Lilette, Gautreau's, and a couple of others. The "ambition" issue is an interesting one.

I agree. August and Gautreau's are more my style.
I enjoyed my three meals at Stella, but when I think about eating at a nice place it doesn't register as a first or even third thought.

I'm stuck in the middle. There are a handful of restaurants in New Orleans that are in line to try and Stella! is on that list, but for being considered one of the best restaurants in this area it's a little ways down that list.
I don't like to go to dinner and worry about the prices. If I want to order a certain bottle of wine I know usually runs about $50 in a restaurant setting I don't want to get the bill and see I was charged $70-$80 for it. I don't want to pay $15-$20 for a glass of bourbon or scotch that I know generally runs for $10-$12. That kind of stuff irks me. Stella! obviously charges handsomely for allowing you to dine there.
If I've ventured down to New Orleans I'm usually eating and making a dining event out of it and enjoying the company/food/and booze...and that usually means a lot of it. The buyers remorse syndrome seems like it might set in after a night at Stella! when I receive my bill.

I personally feels it important to differentiate between best and favorite.
Galatoire's is where I have celebrated most important events in my life...it makes me think of my grandparents, etc. Dick and Jenny's is a restaurant I feel extremely comfortable at and frequent much more Stella! or MiLa.
Neither one of these compare when speaking of a Stella! or MiLa though.
I think maybe the only three restaurants that overlap in my top 10 best and top 10 favorite list in NOLA are August, Herbsaint and Galatoire's.

Pretty strange to say the dishes needed salt and pepper, that's the last thing I would think when tasting one of his dishes. Salt and pepper? I S&P my wife's dishes, but not EVER at a high end place. I eat it like it came out, and enjoy the flavors as they are.
Posted on 1/18/11 at 9:02 am to Gaston
This was the first time I have read of a review of a place such as this and someone mentioned the need of a salt and pepper shaker.
To each his own.
To each his own.

The service was very formal and almost pretentious. I realize people come there for that, but it's almost like it is designed to intimidate. They would parade around the table and set everyones food down at the same time, then regurgitate the words of what the course was
I really don't like that crap either. I wish August would tone it down as well. The type of service at Lilette and Gautreau's, and any number of other restaurants, is more my style. I like a less formal interaction between server and customer. I like good courteous service, but not stiff and phony.

I like great service, but there is a certain style that is off putting. We should get drunk and discuss this important issue. We could regale each other with nefarious exploits from the past.
And,yes, Uptown is nuts. You could dine out for a year in this part of town and not get bored.
BTW, time for me to make another visit to Casamento's.

Exactly. In the case of Stella!'s staff, some of them would have beautiful careers in a funeral home if they ever decided to go that route.
