In Bham, NY Butcher Shop has it as does Piggly Wiggly. The Pig carries Snake River Farms. Not sure what NY carries, but it is significantly better and priced accordingly.

The Pig has waygu??? American, Australian, or Japanese?

Crowd cow has an excellent selection of meat sourced from Japan.

Srf is about as good as you’ll find for American wagyu.

I’ll recommend double 8 cattle for American wagyu as well.

I go to Costco quite a bit. I have never seen waygu at Costco. I did buy a whole prime ribeye from them about a month ago, though, and they are my go to for briskets over any grocery store. About the only local place I can consistently fine prime brisket.

You can order it off the website. While it was cheaper than the loin I bought from what I have seen it was not as marbled as mine but still real nice.

That's a pretty good deal, but it comes whole and frozen. Dealbreaker! I'd have to thaw it, cut it into steaks and cook them all at once. No way I'd ruin it by re-freezing.

They all come frozen. Mine was frozen and I thawed cut and re froze. You can get just individual steaks tho if you rather.

I've always been told, to never thaw and re-freeze any meat.

Snake River Farms is a domestic producer. NY Butcher Shop is Australian A5. Ribeyes we’re $75/lb.

Thanks for the info. I've emailed that butcher shop. If they have it, I'm going there to pick up some nice ribeyes this week.

Did you pan sear yours or put them on the grill?

I have a BGE. So, I either reverse sear or use the sous vide. The Snake River Farms at the Pig is in the $30+ per pound range. And YES, the NY Butcher product at twice the price is worth every penny. Best steak I’ve ever had.

Thanks for the advice. I have a BGE and a Recteq. Reverse sear is what I do on all my steaks now. Wasn't sure about this, though. Didn't want to hurt such an exquisite piece of meat! What temp do you smoke it to, before searing?

If reverse searing, I’ll smoke it indirect over cherry wood @ 225 until I get close to my target temp. Ramp it up to 600+ while the steaks rest, then sear a min or so per side to finish.
